Christmas Breakfast Tradition


Jalapeno Quiche is one of our traditions on Christmas Morning. I cheat and use a frozen pie crust just to get things moving a little faster.


Cook pie crust for 15 minutes in 350 degree oven. Use pie weights or beans to keep the pie crust from puffing up. Let pie crust cool before adding filling.


Lightly beat 5 eggs
Add 1 cup of cream
1 cup shredded Monterrey Jack Cheese
1/2 cup shredded Parmesan cheese
1/4 cup chopped jalapenos
1 Teaspoon salt
1/4 teaspoon pepper

Brown 1/2 cup chopped onion in a 2 tablespoons of butter.
Seed, then cup up 1-1/2 roma tomato


Spread onion on the bottom of the pie crust. Sprinkle the tomato over the crust. Pour in cream mixture. Cook for about 30 minutes in 375 degree oven.
