Early Christmas Dinner

Standing Pork Rib Roast. Doesn't it look gorgeous? It was delicious too.

Our friends have found a butcher in San Miguel who is very accommodating. They went to him with pictures and diagrams of how to make a standing pork rib roast because they were not sure he had ever made one before. He was listening to them and then a big smile spread across his face. "Ahh, si, si, a corona." Now it was his turn to show a picture. He knew exactly what they wanted. When they went back to pick it up, the butcher and his helpers were just finishing it and they were standing around it very proud of themselves because they had prepared a perfect standing pork rib roast. Our friends cooked it and filled it with rice.
So if you want a standing pork rib roast, ask the butcher if he knows how to make a corona de cerdo.

It was a lovely dinner.

a pork crown-looks good enough for royalty ;-)

we always have pork for christmas because that's what cubans traditionally eat for noche buena, but i've never had a corona de cerdo-it sure looks good!

what are you guys doing for chirstmas dinner? i'm sure you'll be having a feast at your place.

while looking for a recipe a few days ago, i found the pickled carrot recipe you e-mailed me last year. i'll have to make them again sometime-i remember how delicious they were. in case you don't remember who i am, i spent 2 1/2 months doing volunteer work in chacala the last 2 winters. we were supposed to go to sma before heading back home, but our plans changed and we were not able to make it. someday ;-) you had mentioned an italian restaurant, bella luna i believe, is it still open?

Talk about an education -- I always thought that corona was a slighty sour, light yellow, rather foul tasting liquid that came in a tall clear glass bottle. Who knew?

Corona is crown....doesn't always apply to beer. LOL
