In Coahuila where we used to live Gorditas were a common breakfast. Now that we live in Monterrey they are replaced by tacos in the mornings. The fillings & size does vary so much from location to location here. A few years ago I bought 2 small Gordita iron presses that were used in Coahila by the cooks there. I don't see the same method everywhere though. Nice food photo! Open and filled. Let's see, I'll take mine with my recipe filling of <BR/>"Cabbage Ala Spanish." That's cabbage, onions, jalapeno's, tomatoes, S&P and all just stir fried or until the onions and jalapenos have softened. It's delicious.
